It has become a popular tradition to keep the top tier. Cakes used to be well preserved by liquor and fruit they contained, and were typically served to the guests at the christening of the first child. In those days, women would usually give birth within one year of the wedding.
Now, modern wedding cakes are rarely made out of fruitcake, and most couples plan to extend their “honeymoons” beyond a year from the date of their marriage. Therefore, if saving the top tier is a tradition you wish to pursue, it should be wrapped really well and kept frozen. It can probably last that way for about three months. Then it can be slowly thawed in a fridge and shared when celebrating a one month anniversary. Of course, if you want a keepsake from your wedding cake but don’t want the hassle of saving the tier, you can always crown your cake with a fancy wedding cake topper, which you can keep forever and even pass to future generations.
Another fact to keep in mind is that having a tier of cake that won’t be served at the wedding adds to the cost of the cake. So this is not a good idea for those that are budget conscious. And, speaking of budgets, it really isn’t necessary to have the exact number of servings to match the number of guests. As hard as it is to imagine, some people actually don’t want to eat cake, especially when there is another dessert being served. A smaller cake can be commissioned, and later on, if the guest list grows or you’re concerned about having enough, you can always order a small “back-up” cake within two weeks of the wedding date. Whichever way you go, the cake is a big deal and you should do something to remember it and make it last as long as possible, aside from fabulous pictures of course!
